Instead of making potato salad or macaroni salad for your summer barbecue, try this Broccoli and Bacon Salad. It’s really great for any time of year; don’t just save it for the summer time.


2 large broccoli bunches (washed and cut into flowerets – not cooked)
1 lb. of bacon (cooked crisp, well drained, and crumbled)
½ red onion, sliced
2 cups mayonnaise
6 tablespoons of red wine vinegar
4 tablespoons of white sugar

Place broccoli flowerets and onion slices into a large bowl. In separate bowl, mix mayonnaise, vinegar, and sugar until well blended (it’s best to use a wire whisk if you can - it helps to get all the lumps out of the mayonnaise). Pour mixture over broccoli and onions and toss – then add bacon and mix well. Refrigerate for a few hours before serving; or make it the night before.
